Once we had sussed what food gave us the best chance of avoiding an upset stomach i.e. not the half chicken with blood running down the bone, we ate relatively well.
The ability to enjoy eating rice every day and an instant love for the indigenous chilli sauce was definitely useful. Leman, our driver, introduced us to the bottled fire juice and we never looked back. And we made a point of buying a bottle from Blantyre airport on the way home.
Breakfast was the best meal of the day by far. Made-to-order omelettes and a cup of tea set us up beautifully for the long day ahead and kept us going until evening.
