We were recommended to try a fish indigenous to Malawi called chambo. And always keen to try anything new we gave it a go! Well, it was absolutely delicious and became an instant favourite all round. So much so that when it wasn’t on the menu, we bought it ourselves and brought it back to Kara O’Mula Lodge for the chefs to cook.

We would pull over at the roadside and select our chambo from the fan of fish displayed on the baking ground. It was naturally a bit of a concern what state the fish would be in by the time we had driven our three hour journey back to Kara O’Mula Lodge in the heat of the day.

But our driver Leman had it all in hand and tied the fish to the roof of our car!
